You want a bigger boat. You will get a semi-private course, with the instructor on your boat. You will learn how to dock the boat, how to install dock lines and fenders, manage the auxiliary engine, anchor, read a marine chart and sail the boat. In a 30 hour course, you'll probably sail less than in a 30 hour course on a dinghy.

Sail Canada Learn to cruise programs in Montreal
These schools offer a program with instructors that have been certified by Sail Canada.
École de voile Gilles Tétrault
Pointe-Claire Yacht Club
Robert Corbeil (Capitaine Jack)
Beaconsfield Yacht Club
Private club programs
The Royal Saint-Lawrence Yacht Club has a fleet of 5 Sharks. Last time I went on these boats, they did not have engines nor reefing lines so some parts of the Sail Canada Basic Cruising standard cannot be taught. But it's a great program and the students have access to the boats for a while after the last class.
